There is plenty of room for alterations with this recipe. I have added chocolate chips (kid approved) and fruit (Mike approved, although you may need to microwave a little longer if using frozen fruit). You can also change this from a sweet muffin to one with more substance by adding meats and cheeses instead of honey and cinnamon.
*You can substitute other sweeteners instead of using honey, or can remove all together.
**I found that using a wide mouth mug (as pictured) worked the best. If you use a regular coffee mug, you may need to increase microwave time to 1:30 minutes.

Made up of Faba Bean and Lentil proteins, Mike's Mix Vegan Protein is a great way for vegans (and non-vegans alike) to add diversity to their diet. However, many find the flavor of protein powders to be a bit strong. I found I can bypass the flavor in some smoothie combinations but my best success has been using it in baking. I have found it to be very easy to add protein, vegan or otherwise, to most recipes without any negative effect.
I use Mike's Mix Honey Powder as a replacement in recipes that call for honey (or other syrups) as I find it easier and cleaner to use. In this instance though, not using honey/syrup, left the bars a little dry. I recommend using honey or brown rice syrup as noted in the recipe below.

Quinoa flour is a gluten-free wheat flour substitute. Ground into a fine powder, this nutty flour is high in protein and extremely versatile in baking and makes a great high-nutrient addition to smoothies.
Quick tip: Substitute for 1/4 amount regular wheat flour in recipes
Recipe as is makes about 6-8 pancakes, depending on size.
]]>Don't be scared by the idea of sweet potato in a muffin. This recipes is sweet enough to be dessert but nutritious and filling enough to be a meal. I recommend using a blender to combine the ingredients, however, I did not have one available and used my immersion mixer. It was a bit more difficult to mix as a result and I ended up with some sweet potato chunks in my muffins. This would have been avoided had I used a blender.
For the equivalent of 1 egg: Mix 1 Tablespoon of Mike's Mix Ground Flax with 3 Tablespoons water. Let sit for 15 minutes before use.
