Sweet Potato Muffin

Don't be scared by the idea of sweet potato in a muffin. This recipes is sweet enough to be dessert but nutritious and filling enough to be a meal. I recommend using a blender to combine the ingredients, however, I did not have one available and used my immersion mixer. It was a bit more difficult to mix as a result and I ended up with some sweet potato chunks in my muffins. This would have been avoided had I used a blender.

How to make a flax egg

For the equivalent of 1 egg: Mix 1 Tablespoon of Mike's Mix Ground Flax with 3 Tablespoons water. Let sit for 15 minutes before use.

Sweet Potato Muffins with Flax Egg

Ingredients

  • 1 baked sweet potato (if pressed for time, peel and microwave for approximately 5 minutes, or until soft throughout)
  • 2 bananas
  • 2 flax eggs
  • 2/3 cup peanut butter (or nut butter of your choice)
  • 6 tablespoons Real Maple syrup
  • 1 tablespoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 2 teaspoons baking powder

Instructions

  1. Make 2 flax eggs, set aside
  2. Pre-heat oven to 350 degrees
  3. In a bowl, mash 2 bananas
  4. Peel and chop sweet potato, add to bowl
  5. Add all remaining ingredients to bowl and mix
  6. Spray a 12 cup muffin tin
  7. Evenly pour mix into muffin tin
  8. Bake for 20 minutes
  9. Let cool in the tin for 5 minutes, move to a rack and let cool
  10. Enjoy!
