Sweet Potato Muffin
Don't be scared by the idea of sweet potato in a muffin. This recipes is sweet enough to be dessert but nutritious and filling enough to be a meal. I recommend using a blender to combine the ingredients, however, I did not have one available and used my immersion mixer. It was a bit more difficult to mix as a result and I ended up with some sweet potato chunks in my muffins. This would have been avoided had I used a blender.
How to make a flax egg
For the equivalent of 1 egg: Mix 1 Tablespoon of Mike's Mix Ground Flax with 3 Tablespoons water. Let sit for 15 minutes before use.
Ingredients
- 1 baked sweet potato (if pressed for time, peel and microwave for approximately 5 minutes, or until soft throughout)
- 2 bananas
- 2 flax eggs
- 2/3 cup peanut butter (or nut butter of your choice)
- 6 tablespoons Real Maple syrup
- 1 tablespoon cinnamon
- 1 teaspoon ginger
- 1 teaspoon nutmeg
- 2 teaspoons baking powder
Instructions
- Make 2 flax eggs, set aside
- Pre-heat oven to 350 degrees
- In a bowl, mash 2 bananas
- Peel and chop sweet potato, add to bowl
- Add all remaining ingredients to bowl and mix
- Spray a 12 cup muffin tin
- Evenly pour mix into muffin tin
- Bake for 20 minutes
- Let cool in the tin for 5 minutes, move to a rack and let cool
